Brema Group is the Italian company that, since 1985, has treated ice as a raw material to be shaped according to the needs of a diverse clientele—from large-scale retail to pharmaceuticals, from wellness to HoReCa, and finally to the industrial sector. The B-Qube ice makers were designed to meet the demands of the HoReCa industry by providing ice that is resistant, crystal clear, and compact, supporting an ever-evolving and demanding Italian mixology scene.

The B-Qube ice maker range starts with compact under-counter models with a daily production of 29 kg. Available with air or water cooling, these machines can be installed in any environment, thanks to the option of an integrated drain pump. Designed with Green-Tech Design, the easily removable panels ensure consistent performance and easy maintenance.

Each B-Qube weighs 23 g, a weight appreciated by professionals as it allows precise control over dilution, resistance during shaking, and durability in a build-style cocktail. It fits all types of glasses while maintaining a lasting visual impact.

Ditta Artigianale is a benchmark for specialty coffee lovers in Italy. While most of the beverages we serve are hot, the number of iced coffee variations—especially in the summer—is growing, including iced lattes. Cold brew, in particular, has been part of our identity since the opening of our first outlet.

Cold Brew & Tonic

One of the most popular drinks at Ditta Artigianale, made with slow cold-brewed coffee and tonic water. Ice plays a crucial role in a non-alcoholic coffee-based cocktail. Coffee typically expresses its aromatic nuances through heat, but in this case, thanks to the prolonged cold extraction, it maintains its identity. Using ice with low durability poses a high risk of flavor dilution.

Shaken Coffee

Shaken coffee consists of two espresso shots shaken together, optionally with a touch of sugar. In this case as well, ice is a key ingredient: a solid cube like B-Qube does not melt excessively when in contact with hot coffee. During shaking, it quickly releases cold and air, creating a smooth emulsion and a chilled drink in a short time. The result is a perfectly balanced shaken coffee that retains its aromatic characteristics without excessive dilution.
